Don’t worry – being so fabulous and so inspired he was happy to share.
Georgetown Safeway Lemon Chicken
Chicken Breasts, skinless, boneless
Chopped Garlic
Paprika
Olive Oil
Fresh Thyme
Lemons, sliced and halved
Lemon Juice
Fresh Rosemary
With knife, make small slit in each breast to fit sliced lemon half.
Stick lemon slice half into each breast.
(It will stick out the top of the breast)
Combine rest of spices/juice/oil into a marinade (can adjust quantities to taste, I plan to make mine more of a thick paste, as little oil as needed).
Spread over chicken and let sit overnight, or for several hours, in fridge.
Roast in oven on baking sheet at 350 until juices run clear/browned.
(Time varies with quantity of chicken).
Derrick and his team slice these horizontally and serve, making them more elegant for a party, and fork friendly to cut and enjoy.
