
It was a big famous french chef foodie day.
Dejuner – Lunch a Les Cocottes de Christian Constant was off the charts.
Four courses, each utterly perfect.
I even dreamt about dessert…le gaufre – waffle with chantilly – whip cream and creme caramel chaud – all hot and gooey.
Then, we spent the most amazin evening at Spring.
Daniel Rose, from Chicago bien sur, has taken Paris by storm with his dinner party style daily set menu paired with bio artisinal French wines.
His impossible to book, tiny 20+ seater (larger than his first restaurant) is literally next door to our apartment.
When we met Josh , Spring’s chef du cave (wine director), he told us about his Spring Wine Course.
We jumped – immediately – to learn the latest French wine tips and trends as well as age old methods and traditions to boot.
Throw in lovely kitchen small plates while you taste, and I’d say it’s just about the best thing going.

I ate at Spring my second trip to Paris. I had no problem getting a reservation. It was right after he was featured in Bon Appetit. Yumm
