King of Crab


For days now, all I have dreamed of is this layered, gravity inspired, edible experiment in crab.

Starting from the bottom up:

Alaskan King Crab, mixed with jalepeno, spiced peppers and citrus fills the base of the glass with chewy, spicy and sweet.

Floating high above, just inside the rim, is an infused sugar disc composed of three different sugars, which were ingeniously created by:

Mixing

Boiling

Cooling

Powdering

Sifting

and finally…

Baking.

Can you even imagine?

When broken with your spoon, the spiked sugar dissolves scientifically into the juices of the crab…and voila…

Gastronomy in a glass.

    Thank you for reading my mind and writing so eloquently about this night and most especially this King Crab fantasy I too have not been able to get my mind off of! I too was wondering about the preparation and as a former hotel caterer I was most impressed that they pulled this off as a station offering for 1500 guests. Just amazing!
